Family Size Chicken Cacciatore

  • 2 Tbsp. vegetable oil
  • 2 lbs. boneless, skinless chicken thighs, cut into bite-size pieces
  • 2 bags (14 oz. ea.) thawed frozen pepper & onion stir fry, drained well, (press out liquid)
  • 4 cups water
  • 1 can (15 oz.) no salt added tomato sauce
  • 1 package Knorr® Rice Sides™ Family Pack - Spanish
  • 1 Heat oil in large deep sided skillet over high heat. Add chicken and peppers and onions to skillet; season with salt and pepper, if desired and cook, stirring frequently, until chicken is thoroughly cooked, about 7 minutes. Remove from skillet and set aside. <BR>
  • 2 Add water, tomato sauce and Knorr® Rice Sides™ Family Pack - and bring to a boil. Boil, covered 7 minutes or until rice is tender. Stir in chicken, pepper and onion mixture.. Garnish, if desired, with chopped fresh parsley.<BR><BR>
