Heat oil in large skillet over medium heat and cook ham, stirring occasionally, until golden, about 2 minutes. Add onion and green pepper and cook, stirring occasionally, until tender, about 5 minutes. Add garlic and cook, stirring, 30 seconds until fragrant. Add tomato and cook 1 minute.
Stir in water, Knorr® Rice Sides™ - Chicken flavor and pigeon peas. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 7 minutes or until Rice is tender. Stir in salt. Let stand 2 minutes before serving.
Serve, if desired, with cilantro and sliced olives.
