  • 1 Tbsp. margarine
  • 1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 package Knorr® Rice Sides™ - Chicken flavor
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 Tbsp. cayenne hot sauce, or more to taste
  • 2 Tbsp. crumbled blue cheese

  1. MELT margarine in large nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked, about 5 minutes. Remove chicken and set aside.

  2. ADD 2 cups water, Knorr® Rice Sides™ - Chicken flavor, carrots and celery to same skillet and prepare according to package directions.

  3. STIR in chicken and hot sauce. Serve sprinkled with blue cheese and, if desired, additional chopped celery.

Hints & Tips

Tip: To change it up, turn this recipe into nachos! To make Buffalo Chicken & Rice Nachos, preheat oven to 350°. Increase blue cheese to 1/2 cup and combine with 2 cups shredded mozzarella cheese; set aside. Arrange 1 bag (about 12 oz.) tortilla chips in a single layer on 2 aluminum foil-lined baking sheets. Evenly top chips with prepared Buffalo Chicken and Rice mixture, then sprinkle with cheese mixture. Bake 10 minutes or until cheese melts. Serve with additional hot sauce if desired.
