1 medium zucchini
1 small onion, coarsely chopped (1/2 cup)
1 small tomato, coarsely chopped
1/2 cup pitted ripe olives
2 Tbsp. grated Parmesan cheese
Prepare Knorr® Pasta Sides™ - Chicken flavor with water and 1 tablespoon Spread according to package directions.
Meanwhile, melt remaining 1 tablespoon Spread in 12-inch skillet over medium-high heat and cook zucchini and onion, stirring occasionally, until crisp-tender, about 4 minutes. Add tomato and cook, stirring occasionally, 2 minutes. Toss with hot Pasta Sides, olives and cheese.
