Melt margarine in large skillet and cook garlic until golden. Stir in eggplant, red pepper and green onion. Cook over medium heat, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in wine and cook 1 minute. Stir in water and bring to boil. Stir in milk and Knorr® Pasta Sides™ - Chicken flavor. Cook over low heat, stirring occasionally, 7 minutes. Remove from heat, then sprinkle with cheese. Cover and let stand 1 minute or until cheese is melted.
