Lentil Bolognese

  • 1 package Knorr Selects™ Cavatappi Pasta with Marinara Sauce
  • 2 cups water
  • 1 medium yellow onion
  • 1 1/2 cups frozen peas and carrots
  • 1/4 bunch parsley
  • 1 can (15 oz.) lentils
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. chopped garlic
  • 1/8 tsp. crushed red pepper flakes
  • 2 Tbsp. grated Parmesan cheese
  • 1 Cook Knorr Selects™ Cavatappi Pasta with Marinara Sauce in medium saucepan in 2 cups water according to package directions.
  • 2 Meanwhile, dice onion and thaw peas and carrots in strainer under warm running water; drain well. Chop parsley and rinse and drain lentils.
  • 3 Heat oil in large nonstick skillet over medium-high heat. Add onions and cook until softened, about 3 minutes. Add lentils and vegetables, crushed red pepper flakes and garlic and cook 3 minutes, stirring occasionally.
  • 4 Stir hot cooked pasta and chopped parsley into skillet. Serve with grated Parmesan Cheese.
