Curried Vegetable Couscous

  • 3 cups water
  • 1 package Knorr® Vegetable recipe mix
  • 1/4 cup raisins or golden raisins or currants
  • 1/2 tsp. curry powder
  • 2 Tbsp. olive oil
  • 1 box (10 oz.) couscous
  • Slivered almonds (optional)
  • 1 Bring water and next 4 ingredients to a boil in a medium saucepan, stirring frequently. Reduce heat and simmer covered for 2 minutes. Stir in couscous then remove from heat and let stand covered for 5 minutes.
  • 2 Fluff couscous with fork before serving. Garnish with slivered almonds and chopped fresh parsley. Your taste buds will thank you for this!
