- 1 package Knorr® Rice Sides™ - Chicken Broccoli
- 2 1/4 cups water
- 1 Tbsp. margarine
- 1 jar (7 oz.) roasted red peppers, drained
- 4 boneless, skinless chicken breasts (about 1 lb.), pounded thin
Preheat oven to 350°. Prepare Knorr® Rice Sides™ - Chicken Broccoli with 2 cups water and margarine according to package directions; let cool slightly.
Evenly top each chicken breast half with roasted peppers, then spread each with 1/4 cup rice mixture; bring up sides to form bundles and secure with wooden toothpicks.
Combine remaining rice mixture with remaining 1/4 cup water in 11 x 7-inch baking dish. Arrange chicken bundles over rice. Bake uncovered 25 minutes or until chicken is thoroughly cooked. Remove toothpicks before serving.
