Cheesy Rice with Sweet Onions & Toasted Nuts

  • 1/2 cup mixed nuts and seeds, such as slivered almonds, cashews and sunflower seeds, larger nuts chopped
  • 2 Tbsp. vegetable oil or butter
  • 1 large red onion or 4 shallots, thinly sliced
  • 2 cups water
  • 1 package Knorr® Rice Sides™ - Cheddar Broccoli
  • 1 can (15.5 oz.) no salt added kidney beans, rinsed and drained
  • 1 TOAST nuts and seeds in large skillet, tossing often, until golden. Remove and set aside.
  • 2 HEAT oil in same skillet and cook onion over low heat until very tender.
  • 3 POUR in water and Knorr® Rice Sides™ - Cheddar Broccoli and bring to a boil.
  • 4 STIR in beans; reduce heat and simmer, covered, 7 minutes, or until the rice is tender.
  • 5 SERVE with the toasted nuts and seeds scattered on top. Enjoy!
