A salad starring chicken
Take your salad-ing up a few notches with this perfect Zesty Lemon Herb Grilled Chicken Salad recipe. The mixed greens deliver that wonderful freshness and crunch, while the zesty lemon and herb grilled chicken adds some lovely substance, making this more of a complete meal than a salad. Here’s what you’ll need to put it together:
Lemon Herb Grilled Chicken – tender chicken marinated with zesty lemon and fresh herbs like rosemary and thyme, the star of the show
Mixed greens – for that fresh, crisp base for your salad, a mixture like rocket, spinach and baby gem lettuces, but this can be whatever you fancy
Roasted butternut squash – for a touch of sweetness and a nice pop of colour
Apples – the crisper the better, sliced, for that delightful crunch and hint of tartness, the Honeycrisp or Granny Smith varieties are ideal
Dried cranberries – just a handful to give your salad a sweet-tart flavour and an eye-catching pop of ruby-red colour
Candied pecans – again, for some delightful crunch, as well as a sweet, nutty flavour
Goat cheese – will provide a tangy creaminess
Red onion – for a mild bite and more lovely colour
Knorr Aromat Seasoning – a versatile, finely-balanced blend of herbs and spices
Fresh herbs – parsley, chives or dill, for a dash of colour and extra flavour
Homemade dressing:
A great dressing is essential for a salad, and sure, you can pick them up ready-made in a store, but we’re of the mind that it’s so much nicer making your very own in your very own kitchen – that way you’re in total control. For this particular dressing you’ll need to combine the following elements:
Lemon juice
Olive oil
Fresh herbs
A dash of honey
Just go with your instincts when you put it together, tasting along the way. If you need a bit more guidance, we have some useful tips right here.
