Steak and potato wedges with chimichurri sauce

For the steaks

  • 2 beef steak
  • 2 tbsp olive oil

For the potato wedges

  • 450 grams potato cut into wedges
  • 2 tablespoons olive oil

For the Chimichurri sauce

  • 60 grams chopped fresh parsley
  • 15 grams chopped fresh coriander
  • 60 mL red wine vinegar
  • 120 mL olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano

  1. Take the steaks out of the fridge 30 minutes before cooking. Drizzle with 2 tablespoons olive oil and season with Aromat Chilli.

  2. Preheat the oven to 220°C/200°C fan. Place potato wedges in a saucepan, cover with water, season with salt, and simmer for 5 minutes. Drain.

  3. Heat 2 tablespoons olive oil in an ovenproof tray for 5 minutes. Add wedges in a single layer and cook for 20 minutes. Turn wedges over and cook for another 15 minutes until golden and crispy.

  4. In the meantime, mix all chimichurri ingredients in a bowl.

  5. Heat a griddle pan over high heat. Cook steaks fat-side-down for 1 minute until crispy. Lay steaks flat and cook for 2-3 minutes on each side for medium-rare.

  6. Let steaks rest for a few minutes, then slice thickly. Serve with wedges and spoon chimichurri over the steaks.
