Italian Gnocchi with Rich Beef Sauce

This one-pot recipe with beef, gnocchi and tomato sauce is a definite crowd-pleaser.

  • 1 Knorr Rich Beef Stock Cubes
  • 600 g beef chuck steak, diced
  • 400 g tinned chopped tomatoes
  • 400 g gnocchi
  • 300 g courgette, chopped into small chunks
  • 250 g cherry tomatoes
  • 1 brown onion, chopped
  • 5 cloves of garlic, crushed

Optional:

  • 5 grams chopped basil

  1. Heat a tablespoon of olive oil in a large saucepan over medium-high heat. Fry the beef, in 2 batches for 5 minutes or until browned all over, transfer to a heatproof bowl.

  2. Heat another tablespoon oil in the same pan over medium heat and add the onion and fry until brown. Add the garlic and cook for 1 minute or until fragrant.

  3. Add the chopped tomatoes, Knorr Rich Beef Stock Cube and 250ml water. Put the beef back into the pan.

  4. Bring to a boil so the stock pot can dissolve. Reduce heat to low. Cook, covered, for 2 hours or until beef is tender.

  5. Add gnocchi, courgette, cherry tomatoes and cook covered for about 7 minutes or until the gnocchi is soft and tender (add a little water if you lost too much liquid during the cooking process).

  6. Sprinkle some chopped basil on top
