Sweet Potato & Beetroot Blankets

  • 1 Knorr Vegetable Stock Cube
  • 1 puff pastry sheet
  • 150 g celeriac
  • 150 g sweet potatoes
  • 150 g beetroot
  • 150 g carrots
  • 100 g oats
  • 60 g plant-based unsalted butter block
  • 4 tbsp plant based milk
  • 2 tbsp vegan horseradish sauce

  1. Peel and coarsely grate the vegetables, then add the plant butter and Knorr Vegetable Stock Cube to a frying pan and sweat the vegetables for 5 minutes until softened then add the oats and the horseradish.​

  2. Pour the mix out onto a tray and allow to cool then roll into sausages. ​

  3. Cut the pastry into 24 squares and place the sausage diagonally in the middle then brush one side with the milk and wrap over and press to seal.​

  4. Brush the tops with more plant milk then bake on a lined tray for 20-25 minutes at 180c until golden.
