Falafel Ingredients

  • 1 Knorr Vegetable Stock Cube crumbled
  • 800 g tinned chickpeas drained and rinsed
  • 120 g red onion roughly chopped
  • 2 garlic cloves
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp chilli powder
  • 1/2 tsp baking powder
  • 60 g parsley leaves roughly chopped
  • 60 g coriander leaves roughly chopped

Tagine Ingredients

  • 1 Knorr Vegetable Stock Cube crumbled
  • 350 g sweet potato peeled and diced
  • 400 g tinned chickpeas drained and rinsed
  • 400 g tinned chopped tomatoes
  • 1 onion finely chopped
  • 2 cloves of garlic minced
  • 1 tsp oil
  • 300 ml hot water

Garnish

  • chopped coriander
  • tahini

Falafel Tagine
  1. Add all the ingredients except the baking powder to a food processor. Blitz to a crumble mixture. Add the baking powder and stir a couple of times to combine.

  2. Using a large spoon, form the mixture into balls/patties about the size of a golf ball (approximately 20). Brush or spray with oil.

  3. Preheat the oven to 240ºC and bake for 12 minutes or until golden brown.

  4. In a large pan on medium heat, add the oil. When hot cook the onion until soft. Add the garlic and cook until fragrant.

  5. Add the sweet potatoes into the pot and stir well. Cover and cook for a few minutes. Add the chickpeas and cumin and stir to combine. Pour in the tin of tomatoes.

  6. Mix the Knorr Vegetable Stock Cube with hot water until dissolved then pour into the chickpeas mix. Stir to combine and cover; simmer for 30 minutes.

  7. Serve with the falafels on top and garnish with a drizzle of tahini and coriander.
