Broccoli & Quinoa Cakes

  • 2 tsp Knorr Rosemary & Onion Seasoning
  • 250 g cooked quinoa
  • 1 broccoli
  • 1 onion diced
  • 1 egg
  • 1/2 tsp garlic
  • 60 g cheese grated
  • 30 g almond flour
  • 2 tsp olive oil
  • 1/4 tsp pepper

Serves With

  • handful of baby salad leaves

  1. Boil the broccoli for 6 minutes, drain, leave to cool and pat dry (this removes the moisture preventing the cakes from being too wet).

  2. In a food processor (or hand blender) add the broccoli, quinoa, Knorr Rosemary & Onion Seasoning, onions, egg, pepper, garlic and cheese and combine until finely ground. Then mix in the almond flour and once mixed, scoop the mixture to form 5 patties.

  3. Heat the oil in a pan at medium heat then place the patties in the pan. After around 4 minutes, flip and cook the other side.

  4. Serve with a side of baby leaf salad.
