Slow Cooker Mediterranean Chicken
Save energy with this delicious slow cooker recipe. Chop it, cook it, forget it until it's time to indulge in it. Pop in the freezer for an easy weeknight dinner at a later date.
- 1 Knorr Chicken Stock Pot
- 3 chicken breasts chopped into chunks
- 400 g chopped tomatoes
- 400 g butter beans drained and rinsed
- 1 green bell pepper chopped
- 2 onions finely chopped
- 2 cloves garlic finely chopped
- 75 g pitted olives
- 2 tbsp tomato puree
- 250 ml water
- 1 tbsp plain flour
- 2 tbsp olive oil
- 1 handful parsley roughly chopped
Add all ingredients except parsley to the slow cooker. Add in the Knorr Stock Pot and mix well.
Put the lid on and cook on high for 3-4 hours or 6 hours on low.
Serve on its own or with rice, topped with chopped fresh Parsley.
