Simple Coq au Vin

  • 100g bacon, blanched and cut into smaller pieces
  • 5–6 small onions cut into ⅛s
  • 1.5kg chicken thighs and legs
  • 6 garlic cloves, peeled
  • Pepper to taste
  • 500ml chicken stock made from Knorr Stock Cubes
  • 500ml red wine (pinot noir, burgundy)
  • 2 bay leaves
  • Fresh thyme
  • 150g mushrooms, choose small ones or cut into quarters
  • A handful of fresh parsley, chopped

  1. Brown the bacon over medium heat in a deep pan big enough to hold the chicken. Remove the bacon and set aside.

  2. Using bacon fat brown the chicken well on all sides. Set aside and remove the excess fat.

  3. Sauté the onions in the pan until golden brown. Return the bacon and chicken pieces to the pan.

  4. Add wine, herbs, garlic and pour in the stock. Cover and simmer for 20 minutes. Add the mushrooms and bring to the boil. Reduce the heat to low and cook for 20 minutes. Adjust seasoning. Garnish with parsley and serve.
