Penne Arrabiata

This spicy pasta dish packs a punch! Serve with crusty garlic bread for a delicious weeknight dinner.

  • 1 Knorr Spicy Stock Pot
  • 3 tbsp olive oil
  • 2 or 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 can chopped tomatoes (400g)
  • 300 g penne pasta
  • handful grated Parmesan
  • handful fresh basil
  • 1 tsp red pepper flakes (optional)

  1. Heat a saucepan over medium heat. Once hot, add olive oil and minced garlic. Cook for 1 minute, stirring often.

  2. Add tomato paste and stir into the garlic.

  3. Add crushed tomatoes and bring to a low simmer. Add spicy stock pot and stir until dissolved. Cook, covered, for 20-30 minutes, or until the sauce has reduced slightly.

  4. Taste and adjust flavour as needed, adding red pepper flakes for heat if necessary.

  5. Meanwhile bring a saucepan of water to the boil, add the pasta and stir to prevent clumps. Cook according to the package instructions. Reserve 1/2 cup of pasta water then drain the pasta.

  6. Add the cooked pasta to the sauce and stir to coat. If your sauce looks too thick, add pasta water 2 tablespoons at a time until the sauce is the desired consistency.

  7. Serve garnished with parmesan and fresh basil.
