  • 1 Knorr Organic Chicken Stock Pot
  • 4 organic boneless chicken breasts
  • 400 g couscous
  • 400 g can chopped tomatoes
  • 100 g dried apricots halved
  • 1 large onion sliced
  • 1 tablespoon harissa paste
  • 1 tbsp olive oil
  • a handful of coriander

  1. Mix the chicken with the harissa paste. Heat the olive oil in a large pan, add the chicken and fry for 2-3 mins. Remove and set aside.

  2. Add the onion to the pan and fry for 4-5 mins until soft. Return chicken to the pan.

  3. Stir in the Knorr Organic Chicken Stock Pot, apricots and tomatoes and cook, covered, over a low heat for 45 mins.

  4. Serve with couscous and garnish with herbs.
