Meat Free Chicken Noodle Soup

  • 1 Knorr Meat Free Chicken Stock Pot
  • 1 tbsp olive oil
  • 1 small onion finely diced
  • 2 sticks celery diced
  • 2 to 3 carrots diced
  • 2 garlic cloves minced
  • 250 g potatoes
  • 150 g fusilli pasta
  • 1 litre water
  • 1/2 tsp pepper
  • 1/2 tsp dried thyme
  • handful parsley

  1. Prepare the veg and set aside.

  2. Add water to a large pot and bring to a boil, add the stock pot, thyme and pepper.

  3. Immediately add all of the veggies (carrots, celery, onion, garlic and potatoes). Stir well and bring back to a boil. Once boiling, turn to the lowest heat, cover and simmer around 10 minutes until the carrots and potatoes are becoming tender.

  4. Add the pasta and bring back to a simmer over medium-high heat. Once simmering, leave the lid off and cook for about 10 minutes, or until the pasta is tender, but still firm.

  5. Taste and add salt if needed.

  6. Garnish with freshly chopped parsley before serving.
