  • 2 tbsp Knorr Deep Smoke Liquid Seasoning
  • 6 sweet potatoes
  • 1 medium-sized onion
  • 1 tinned chopped tomatoes
  • 1 tinned black beans
  • 1 tinned jackfruit
  • 1 garlic clove
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tbsp brown sauce
  • 1 tbsp olive oil
  • 4 tbsp vegan yoghurt
  • 1 handful of coriander

  1. Bake the sweet potatoes for 35 minutes at 170C, until just soft. Cut the sweet potato in half and scoop out the middle to create a shell then return to the oven for 15 minutes until golden and crispy.

  2. Heat the oil in a saucepan then add the garlic, onions, spices and cook until slightly golden.

  3. Add the tomatoes, black beans, brown sauce and jackfruit then simmer for 10 minutes then pour in the Knorr Deep Smoke Liquid Seasoning.

  4. Remove the potato skins from the oven and place onto a plate. Spoon over the jackfruit and top with a spoonful of yoghurt and a sprinkle of chopped coriander.
