Hearty One Pot Veggie Hot Pot

  • 2 tbsp Knorr Rich Vegetable Liquid Seasoning
  • 400 g sweet potatoes
  • 1 tin of green lentils drained
  • 1 medium-sized onion
  • 150 g mushrooms
  • 1 carrot
  • 450 ml water
  • 1 tbsp tomato puree
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • a handful of flat leaf parsley

  1. Fry the onion, carrot, and mushrooms in oil for 10 minutes until slightly brown.

  2. Add the lentils, thyme and tomato puree then pour in the water and bring to a simmer.

  3. Add the Knorr Rich Vegetable Liquid Seasoning and cook for 10 minutes.

  4. Pour into a casserole dish and top with thinly sliced sweet potato then bake for 30 minutes at 160C.

  5. Once golden remove from the oven and sprinkle over the chopped parsley before serving.
