Gazpacho with Knorr Vegetable Stock Cube

  • 1 Knorr Vegetable Stock Cubes
  • 4 ripe tomatoes
  • 2 cloves garlic
  • 1 tbsp tomato puree
  • 1/2 cucumber
  • 300 ml water
  • 120 ml olive oil
  • 1 tbsp soft brown sugar
  • 50 ml sherry vinegar
  • 1/2 handful dill
  • 1/2 handful mint
  • 1/2 handful parsley

  1. Roughly chop the tomato, cucumber and herbs.

  2. Make up the stock with 300ml of boiling water.

  3. Blend the stock, vegetables and all other ingredients until very smooth.

  4. Chill in the fridge for at least 2 hours.

  5. Mix and serve.
