Vibrant Quinoa Salad

With just a pinch of green chillies, this salad has a warm but subtle kick which is then cooled by the sweet red pepper and kale.

  • 2 tbsp Knorr Rich Vegetable Liquid Seasoning
  • 100 g red quinoa
  • 1 tin of black beans drained
  • 1 tin of sweetcorn drained
  • 100 g kale
  • 1 green chilli
  • 1 red pepper
  • 300 ml water
  • a handful of coriander
  • 1 avocado
  • 1 lime

  1. In a medium saucepan bring quinoa, Knorr Rich Vegetable Liquid Seasoning and water to a boil.

  2. Cover reduce the heat to low and simmer for about 15 minutes. Turn off heat and let sit with lid on for 5 additional minutes then fluff with a fork.

  3. In another pan, lightly cook the kale for 1 minute in boiling water then drain and allow to cool.

  4. Mix the beans, sweetcorn, diced red pepper, chopped chilli and coriander with the cooked quinoa.

  5. Spoon into a serving bowl with the kale, sliced avocado and lime.
