Vibrant Quinoa Salad
- 2 tbsp Knorr Rich Vegetable Liquid Seasoning
- 100 g red quinoa
- 1 tin of black beans drained
- 1 tin of sweetcorn drained
- 100 g kale
- 1 green chilli
- 1 red pepper
- 300 ml water
- a handful of coriander
- 1 avocado
- 1 lime
In a medium saucepan bring quinoa, Knorr Rich Vegetable Liquid Seasoning and water to a boil.
Cover reduce the heat to low and simmer for about 15 minutes. Turn off heat and let sit with lid on for 5 additional minutes then fluff with a fork.
In another pan, lightly cook the kale for 1 minute in boiling water then drain and allow to cool.
Mix the beans, sweetcorn, diced red pepper, chopped chilli and coriander with the cooked quinoa.
Spoon into a serving bowl with the kale, sliced avocado and lime.
