  • 1 can (540 mL) low sodium cannellini beans, rinsed and drained
  • 1 Tbsp. (15 mL) olive oil
  • 4 canned artichoke hearts, rinsed, drained and chopped
  • 1 1/2 cups (375 mL) water
  • 1/2 cup (125 mL lowfat milk
  • 1 pouch Knorr® Sidekicks® Creamy Garlic Raffaello Pasta Side Dish
  • 1 1/2 ounces (45 g) cream cheese, at room temperature
  • 1 package (227 g) baby spinach leaves
  • 2 Tbsp. (30 mL) chopped sun-dried tomatoes packed in oil

White Bean , Spinach & Artichoke Pasta
  1. HEAT oil in large nonstick skillet over medium-high heat and cook beans, stirring occasionally, 3 minutes. Remove and set aside.

  2. ADD artichoke hearts to same skillet and cook, stirring occasionally, until browned, about 4 minutes. Remove and set aside.

  3. STIR water, milk, Knorr® Sidekicks® Creamy Garlic Raffaello Pasta Side Dish and cream cheese into same skillet and bring to a boil. Cover; reduce heat and cook, stirring occasionally, 11 minutes or until pasta is tender. Stir in spinach, artichoke hearts and sun-dried tomatoes. Cover and let stand 2 minutes. Serve, if desired with grated Parmesan cheese; now it's delicious. Dig in!
