  • 8 Maple Leaf® Prime RWA Bone-in Skin-on Chicken Thighs
  • 2 tsp. (10 mL) Knorr® Concentrated Chicken Bouillon
  • Juice of 1 orange
  • 1 Tbsp. (15 mL) vegetable oil
  • 1 1/2 tsp. (7 mL) brown sugar
  • 1 Tbsp. (15 mL) honey
  • 2 Tbsp. (30 mL) water
  • 4 peaches or nectarines, cut into wedges
  • 4 cups (1 L) chopped Romaine lettuce leaves
  • 4 cups (1 L) mixed spring greens
  • 1/2 cup (125 mL) crumbled old white cheddar cheese
  • 1/2 cup (125 mL) walnuts, toasted
  • 1/4 cup (60 mL) Hellmann’s® Honey Dijon Salad Dressing

  1. Place chicken in a large glass container. In a small bowl combine Knorr® Concentrated Chicken Bouillon, orange juice, oil, brown sugar, honey and water. Whisk well. Pour over chicken. Massage marinade into chicken; cover, and refrigerate for 2 hours or overnight.

  2. Preheat one side of grill over medium-high heat. Grill peaches 1 to 2 mins per side. Remove and set aside.

  3. Shake excess marinade off chicken and place on grill. Grill 3 to 4 minutes per side. Transfer chicken to the unheated side of grill and close the lid. Grill on indirect heat for 18 to 20 mins or until it reaches an internal temperature of 165°F (74°C). Remove and keep warm.

  4. Place lettuce, peaches, cheddar, and walnuts into a large bowl. Pour in Hellmann’s® Honey Dijon Salad Dressing and toss well to coat.

  5. Arrange salad on a large platter and lay chicken over top.
