Rosemary Roasted Potatoes

Chunks of potatoes are tossed with fresh rosemary, chicken stock and olive oil and roasted until golden for a side dish low in fat and high in fibre.

  • 1 pot Knorr® Homestyle Stock Chicken
  • 1 small onion, chopped
  • 1 Tbsp. (15 mL) olive oil
  • 1 clove garlic
  • 2 tsp. (10 mL) fresh rosemary leaves
  • 1/8 tsp. (1 mL) ground black pepper
  • 4 medium all-purpose potatoes, (about 2 lbs. / 1 kg), cut into 2cm - chunks

Rosemary Roasted Potatoes
  1. Preheat oven to 450°F (230°C).

  2. Combine Knorr® Homestyle Stock Chicken and all other ingredients except potatoes in large bowl. Add potatoes; toss to coat.

  3. Turn into (33 x 23-cm) roasting pan. Roast, stirring occasionally, until potatoes are tender and golden, about 50 minutes.
