  • 1 lb. (450 g) beef stew meat
  • 4 tsp. (20 mL) Knorr® Taste of Morocco Concentrated Bouillon, divided
  • 2 tsp. (10 mL) olive oil
  • 1 large onion, chopped
  • 3 large cloves garlic, chopped
  • 1 Tbsp. (15 mL) minced fresh ginger
  • 2 Tbsp. (30 mL) tomato paste
  • 4 cups (1 L) water
  • 8 small dried apricots

Moroccan Beef Tagine
  1. Toss beef with 1 tsp. (5 mL) Knorr® Taste of Morocco Concentrated Bouillon. Heat oil in 4 qt. (4 L) Dutch oven over medium-high heat and cook beef, turning occasionally, until browned, about 6 minutes. Remove and set aside.

  2. Add onions, garlic, and ginger to same pot and cook, scraping up browned bits from bottom of pot and stirring frequently, until onions start to soften, about 3 minutes.

  3. Stir in remaining Knorr® Taste of Morocco Concentrated Bouillon and tomato paste and cook, stirring, 1 minute. Stir in water and beef and bring to a boil. Cover, reduce heat and simmer, stirring occasionally, 1 1/2 hours. Stir in apricots and cook 30 minutes or until beef is tender. Serve over couscous, garnished with chopped cilantro and/or mint leaves if desired.
