  • 7 ounces (200 g) quinoa, (about 1 cup/250 mL)
  • 2 Tbsp. (30 mL) olive oil, divided
  • 1 lb. (500 g) zucchini, sliced
  • 1 red onion, diced
  • 340 g plant-based ground meat
  • 1 1/4 cups (300 mL) water
  • 1/2 cube Knorr® Vegetable Bouillon Cube
  • 2 Tbsp. (30 mL) tomato puree

  1. Cook quinoa according to package directions.

  2. Meanwhile, heat 1 Tbsp. (15 mL) oil in large skillet over medium-high heat and cook zucchini and onions, stirring occasionally, until lightly browned, about 4 minutes. Remove from pan and set aside.

  3. Heat remaining 1 tbsp. (15 mL) oil in same skillet over medium-high heat. Add plant-based meat and cook, stirring occasionally, until browned, about 5 minutes.

  4. Stir in water, 1/2 Knorr® Vegetable Bouillon Cube and tomato puree and bring to boil. Continue boiling 2 minutes or until liquid is reduced by half. Add zucchini mixture and cook until warmed through, about 1 minute. Serve over quinoa.
