  • 2 Tbsp. (30 mL) olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. (15 mL) fresh thyme leaves
  • 1 bay leaf
  • 1 1/2 Tbsp. (22 mL) chili powder
  • 2 tsp. (10 mL) paprika
  • 2 cups (500 mL) water
  • 1 can (398 mL) no salt added tomato sauce
  • 14 ounces (400 g) red adzuki beans, cooked
  • 2 Tbsp. (30 mL) Knorr® Concentrated Vegetable Bouillon
  • 1 package (350 g) extra firm tofu, patted dry and cut into large chunks

  1. Heat olive oil in large saucepan over medium heat and cook onions, stirring occasionally, until tender, about 5 minutes. Add garlic, thyme and bay leaf and cook 30 seconds. Stir in chili powder and paprika and cook, stirring, 1 minute.

  2. Add water, tomato sauce, cooked adzuki beans and Knorr® Concentrated Vegetable Bouillon and bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes for flavors to blend.

  3. Gently stir in tofu and simmer another 5 minutes. Remove bay leaf.
