  • 3 Tbsp. (45 mL) olive oil
  • 1 Tbsp. (15 mL) Knorr® Concentrated Vegetable Bouillon
  • 2 bell peppers, red and yellow, sliced
  • 14 ounces (440 g) assorted mushrooms, such as Maitake mushrooms and saffron milkcap mushrooms, sliced or left whole if small
  • 2 green onions, cut into 2-in./5 cm lengths
  • 1 can (540 mL) low sodium black beans, rinsed and drained
  • 3 ounces (90 g) reduced fat feta cheese, diced

  1. Preheat oven to 400°F (200° C).

  2. Combine olive oil and Knorr® Concentrated Vegetable Bouillon in large bowl. Add peppers, mushrooms and green onions to bowl; season, if desired, with salt and freshly ground black pepper. Toss to mix and coat. Add black beans and feta and gently toss to mix.

  3. Tear off 4 pieces of parchment paper, each about 12 x 18-in. (30 x 45 cm). Evenly divide vegetable mixture onto centers of parchment. Bring up top and bottom of paper over filling and fold a couple times to seal. Tie ends with string.

  4. Place packets on baking sheets and bake 25 minutes.
