  • 2 Tbsp. (30 mL) sunflower oil or canola oil
  • 1 red onion, chopped
  • 1 carrot, chopped
  • 1 red bell pepper, diced
  • 4 tomatoes chopped
  • 1 can (398 mL) no salt added tomato sauce
  • 1 cup (250 mL) water
  • 1 cup (211 g) dry uncooked black beans, (black turtle beans), cooked until tender*
  • 1 canned chipotle pepper in adobo sauce, finely chopped
  • 2 Tbsp. (30 mL) Knorr® Concentrated Vegetable Bouillon
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. (2 mL) dried oregano leaves
  • Garnish: Chopped fresh cilantro and lime wedges

  1. Heat oil in large pot over medium-high heat and cook onion, carrot and bell pepper 4 minutes, stirring occasionally.

  2. Add tomatoes, tomato sauce, water, cooked black beans, chiipotle pepper, Knorr® Concentrated Vegetable Bouillon, garlic and oregano and bring to a boil. Reduce heat and simmer, stirring occasionally, until vegetables are tender, about 10 minutes.

  3. Garnish with chopped cilantro and serve with lime wedges.
