  • 4 Tbsp. (60 mL) oil, divided
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 3/4 cup (175 mL) red lentils
  • 2 cups (500 mL) water, divided
  • 1 1/2 Tbsp. (22 mL) Knorr ® Garam Masala Seasoning Blend, divided
  • 1/2 cup (125 mL) rolled oats
  • 1 1/2 Tbsp. (22 mL) all-purpose flour
  • 3/4 cup (175 mL) light coconut milk
  • 1 tsp. (5 mL) Knorr Selects™ Vegetable Bouillon
  • Lime wedges

  1. Heat 1 Tbsp. (15 mL) oil in medium saucepan over medium-high heat and cook onion and garlic until softened, about 3 minutes.

  2. Add lentils, 1 cup (250 mL) water and 1 ½ tsp. (6 mL) Knorr® Garam Masala Seasoning Blend and bring to a boil. Reduce heat and cook, covered, over low heat, stirring occasionally, until liquid has evaporated and lentils are tender, 10 to 15 minutes.

  3. Cool slightly then stir in oats and season with salt, if desired. Let stand 10 minutes so oats can soften. Shape into 24 lentil balls.

  4. Heat 2 Tbsp. (30 mL) oil in large nonstick skillet over medium heat and cook lentil balls until browned and heated through; remove and set aside.

  5. Add flour and remaining 1 Tbsp. (15 mL) oil to same skillet and cook 1 minute. Whisk in coconut milk, 1 cup (250 mL)water, 1 Tbsp. (15 mL) Garam Masala and Knorr Selects™ Vegetable Bouillon and cook until sauce has thickened and is heated through.
    Serve lentil balls with sauce and lime wedges.
