Chicken, tomatoes, pine nuts and lemon juice are tossed with parmesan pesto pasta and served over lettuce for a meal that is a good source of iron.

  • 1 package Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish, prepared according to package directions, cooled
  • 2 cups (450 mL) cut-up cooked chicken
  • 2 cups (500 mL) cherry tomatoes, chopped
  • 1/4 cup (50 mL) pine nuts, toasted
  • 1/4 cup (50 mL) fresh basil leaves
  • 1/4 cup (50 mL) kalamata olives, pitted and chopped
  • 1 Tbsp. (15 mL) olive oil
  • 1 Tbsp. (15 mL) lemon juice

  1. Combine all ingredients in large bowl. Serve chilled or at room temperature.
