  • 1 package Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish
  • 1 cup (250 mL) drained bocconcini pearls*
  • 2 cups (500 mL) cherry tomatoes, chopped
  • 1/4 cup (60 mL) pine nuts, toasted
  • 1/4 cup (60 mL) chopped fresh basil leaves
  • 1/4 cup (60 mL) kalamata olives, pitted and chopped
  • 1 Tbsp. (15 mL) olive oil
  • 1 Tbsp. (15 mL) lemon juice

  1. Cook Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish according to package directions and let cool.

  2. In a large bowl, combine cooled Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish, bocconcini, cherry tomatoes, pine nuts, basil, olives, olive oil and lemon juice. Blend gently until combined. Season pasta salad with salt and pepper to taste.

  3. Great side for a summer BBQ! Make the day before and refrigerate to save time.

* bocconcini pearls are found in the cheese section of you local grocery store. If you cannot find pearls, regular-size bocconcini cut into cubes work just as well. Each serving of this salad is a source of fibre, vitamin C and iron.
