  • 2 Tbsp. oil, divided
  • 1 can (540 mL) low sodium black beans, rinsed and drained
  • 1 cup (250 mL) chopped red onion
  • 1 clove garlic, minced
  • 1 large green bell pepper, diced, (1 1/2 cups/375 mL)
  • 1 can (8.75 oz) corn kernels, drained
  • 1 cup (250 mL) water
  • 1 cup (250 mL) lowfat milk
  • 1 pouch Knorr® Sidekicks® White Cheddar and Broccoli Pasta Side Dish
  • 1 cup (250 mL) halved heirloom cherry tomatoes

  1. HEAT 1 Tbsp. (15 mL) oil in large nonstick skillet over medium-high heat and cook black beans, onion and garlic, stirring occasionally, about 5 minutes. Remove and set aside.

  2. HEAT remaining 1 Tbsp. (15 mL) oil in same skillet and cook bell pepper and corn, stirring occasionally, until crisp-tender, about 2 minutes. Stir in tomatoes and cook 1 minute. Remove and set aside.

  3. STIR water, milk and Knorr® Sidekicks® White Cheddar and Broccoli Pasta Side Dish into same skillet and bring to a boil. Cover; reduce heat and cook, stirring occasionally, 10 minutes or until pasta is tender. Stir in reserved vegetables; now it's delicious. Dig in!
