  • 1 lb. (450 g) boneless, skinless chicken thighs, cut into bite-size pieces
  • 1/2 cup (125 mL) plain yogurt, divided
  • 1 Tbsp. (15 mL) fresh lemon juice
  • 1 Tbsp. (15 mL) Knorr ® Garam Masala Seasoning Blend
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) ground turmeric
  • 2 Tbsp. (30 mL) vegetable oil, divided
  • 1 large shallot, thinly sliced (1/2 cup) [ 125 mL ]
  • 2 Tbsp. (30 mL) finely chopped fresh ginger
  • 2 cloves garlic, finely chopped (2 tsp.) [10 mL]
  • 3 vine-ripened tomatoes, seeded and finely chopped (2 cups) [ 500 mL ]

Chicken Tikka Masala
  1. COMBINE chicken, 2 tbsp. (30 mL) yogurt, lemon juice and 1/2 tsp. (2 mL) Knorr® Garam Masala Seasoning Blend in bowl; set aside 20 minutes. Combine remaining Seasoning Blend, salt and turmeric in small bowl; set aside.

  2. HEAT 1 Tbsp. (15 mL) oil in large nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is browned, about 5 minutes; remove and set aside.

  3. HEAT remaining 1 Tbsp. (15 mL) oil in same skillet over medium heat and cook shallot, stirring frequently, until browned, about 4 minutes. Stir in ginger and garlic and cook, stirring, 1 minute. Stir in remaining Seasoning Blend and cook, stirring until fragrant, about 1 minute. Add half the remaining yogurt and cook, stirring until blended, about 30 seconds. Repeat with remaining yogurt.

  4. Stir in tomatoes and bring to a boil over medium-high heat. Reduce heat and simmer until tomatoes have softened, about 3 minutes.

  5. Stir in chicken and any juices and bring to a boil. Reduce heat and simmer, stirring occasionally, until chicken is thoroughly cooked and sauce is thickened, about 15 minutes. Now it's delicious. Dig in!
    Serve, if desired, with hot cooked basmati rice and chopped cilantro.
