  • 2 Tbsp. (30 mL) olive oil
  • 1 cup (250 mL) sliced red onion
  • 1 large red bell pepper, sliced
  • 1 package (227 g) cremini mushrooms, sliced
  • 1 cup (250 mL) frozen corn, thawed
  • 1 pouch Knorr® Sidekicks® Cheddar Chipotle Pasta Side Dish
  • 1 can (540 mL) no salt added black beans, rinsed and drained
  • 1 1/2 cups (375 mL) water
  • 1/2 cup (125 mL) lowfat milk

  1. Heat olive oil in large nonstick skillet over medium-high heat and cook onions, bell pepper and mushrooms until softened, about 5 minutes. Add corn and black beans and cook 1 minute more. Season if desired with salt and pepper; remove and set aside.

  2. Add water and milk to skillet and bring to a boil. Stir in Knorr® Sidekicks® Cheddar Chipotle Pasta Side Dish; reduce heat, cover and continue gently boiling for about 11 minutes or until pasta is tender.

  3. Combine reserved veggies with cooked Knorr® Sidekicks. Serve in bowls topped, if desired, with chopped tomato, cilantro, avocado and lime.
