  • 1 Tbsp. (15 mL) vegetable oil
  • 8 ounces (227 g) bok choy, stems cut into 1/4-in. (6 mm) strips, leaves cut into 1-in. (2.5 cm) pieces
  • 1 red bell pepper, cut into matchsticks
  • 1 1/2 Tbsp. (22 mL) garam masala
  • 8 ounces (227 g) oyster mushrooms, sliced
  • 1 can (227 mL) pineapple chunks in juice, drained
  • 1 can (398 mL) light coconut milk
  • 1/2 cube Knorr® Vegetable Bouillon Cube, crumbled
  • 2 Tbsp. (30 mL) toasted sesame seeds

  1. Heat oil in large nonstick skillet over medium-high heat and cook bok choy stems and bell pepper until vegetables are crisp-tender, about 5 minutes. Stir in garam masala and cook 30 seconds more.

  2. Add mushrooms and cook until softened, about 3 minutes.
    Stir in bok choy leaves and pineapple chunks cook until leaves are wilted and mixture is heated through, about 2 minutes. Transfer vegetables to a bowl.

  3. Combine coconut milk and 1/2 Knorr® Vegetable Bouillon Cube in same skillet and bring to a boil. Reduce heat and simmer until slightly reduced, about 5 minutes. Pour coconut mixture over vegetables in bowl, sprinkle with sesame seeds and season, if desired, with salt. Serve with wild rice if desired.
