Ingredients

  • 2 overipe plantain
  • Plantain flour *
  • Oil
  • Ground crayfish
  • 2 chillies
  • 1 onion
  • KNORR chicken cubes, crumbled
  • Cold water

Cooking Methods

  1. I used ½ corn ½ cake flour

  2. Blend the overripe plantains, the plantain flour and a small amount of water in the blender to make a firm dough

  3. Add the chillies, chopped onion, ground crayfish and crumbled cubes and blend some more

  4. Pour the mix into a bowl and add the oil and mix well

  5. Place a small amount of water in a pot to boil, and place a rack that fits into the pot so that the containers are not touching the base of the pot

  6. Fill metal muffin pans or moulds with the mix, cover well with foil and place on the rack in the pot of simmering water

  7. Steam for 20 – 25 minutes or until done, topping up the water if needed

  8. Leave to cool then serve
