Ingredients

  • 4 potatoes
  • Bacon, finely chopped
  • 1 ripe avo, peeled
  • Mayonnaise
  • Knorr chicken stock cube, crumbled
  • Peri peri spice
  • Herbs
  • Paprika
  • 1 clove, garlic, chopped
  • Chopped spring onions

Cooking Methods

  1. • Wash potatoes and boil until just done

  2. • Mash the avo with the mayonnaise, add the crumbled KNORR cubes, peri peri spice, herbs, paprika and chopped garlic

  3. • In a pan, fry the chopped bacon until crispy

  4. • Add the chopped bacon and chopped spring onions

  5. • Cut a cross in the top of each potato and squeeze the sides gently

  6. • Spoon the avo and bacon mix onto each potato

  7. • Serve as a starter, or side
