  • 2 red bell pepper
  • Margarine
  • Lemon juice
  • Lemon rind, grated
  • Fresh thyme, chopped
  • Fresh parsley, chopped
  • Spring onions, chopped
  • Paprika
  • Knorr chicken stock, cubes, crumbled
  • Cayenne pepper
  • Coarse black pepper
  • Flour
  • 8 chicken thigh

  1. Preheat the oven to 180 degrees Celsius

  2. In a bowl, mix together the mayonnaise, herbs, lemon juice and rind, paprika, crumbled KNORR cubes, cayenne pepper, coarse black pepper and flour

  3. When well mixed, push the mix under the skin of the thighs.

  4. Place on an oven tray with the chopped bell pepper

  5. Bake for 30 – 40 minutes until done and golden

  6. Serve with chips, rice or salad
