  • 1 Tbsp. (15 mL) toasted sesame oil
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. (15 mL) minced fresh ginger
  • 1 red chile pepper, finely chopped
  • 1 Tbsp. (15 mL) ground cumin
  • 1 1/2 tsp. (6 mL) ground turmeric
  • 2 sweet potatoes, (about 1 1/2 lbs./675g) peeled and cut into 2-in./5 cm chunks
  • 1 1/4 cups (300 mL) red lentils
  • 1 pot Knorr® Homestyle Stock Vegetable
  • 3 1/2 cups (875 mL) water
  • 4 ounces (113 g) baby spinach leaves
  • 1/4 cup (60 mL) roughly chopped fresh Thai basil leaves
  • Lime wedges

  1. Heat sesame oil in large saucepan over medium-high heat and cook onion until just softened, about 7 minutes. Add garlic, ginger, red chile, cumin and turmeric and cook until fragrant, about 2 minutes.

  2. Add sweet potatoes and toss until evenly coated with the spice mixture, then cook 5 minutes over medium heat.

  3. Add lentils, Knorr® Homestyle Stock - Vegetable and water and bring to a boil. Reduce heat and simmer, covered, until lentils are tender, about 20 minutes.

  4. Stir in spinach and cook until wilted, about 1 minute. Season, if desired, with salt. Sprinkle with chopped basil and serve with lime wedges.
