  • 2 Tbsp. (30 mL) olive oil
  • 1 medium onion, chopped
  • 1 tsp. (5 mL) grated fresh ginger
  • 1 tsp. (5 mL) ground turmeric
  • 1/2 tsp. (2 mL) Knorr® Harissa Seasoning Blend *
  • 2 lbs. (1 kg) butternut squash, (about 1 large), peeled, seeded and cut into 1 1/2-in./4 cm cubes
  • 4 cups (1 L) water
  • 2 Tbsp. (30 mL) tomato paste
  • 2 Tbsp. (30 mL) Knorr® Taste of Morocco Concentrated Bouillon
  • 2 ounces (60 g) goat cheese (optional)

  1. Heat olive oil in large saucepot over medium heat and cook onion, stirring frequently, 3 minutes. Stir in ginger, turmeric and Knorr® Harissa Seasoning Blend; cook 10 seconds.

  2. Stir in the squash, water, tomato paste and Knorr® Taste of Morocco Concentrated Bouillon; bring to a boil. Reduce heat; cover and simmer until squash is tender, about 20 minutes.

  3. Working in batches, puree soup in blender. Return all of the soup to the pot. Whisk in goat cheese until well blended and smooth (optional). Serve, if desired, with a dollop of crème fraiche or yogurt.

Tip: To make prep time even quicker, try purchasing butternut squash that’s already been peeled and cut. This is often found packaged in the produce section of your grocery store.
*If you like your soup spicier, feel free to double the Knorr® Harissa Seasoning Blend to 1 tsp./5 mL.
