Sazone el cerdo con sal y pimienta. Caliente una cucharada de aceite en una sartén grande y hondo, a fuego medio alto y dore el cerdo. Sáquelo y póngalo a un lado.

Reduzca el fuego a medio, caliente una cucharada restante de aceite y cocine la cebolla durante 4 minutos o hasta que esté suave, revolviendo de vez en cuando. Agregue el ajo, comino y orégano y cocine aproximadamente un minuto. Agregue el cerdo y el resto de los ingredientes. Deje que suelte el hervor. Reduzca el fuego y cocine a fuego lento, tapado, durante 45 minutos o hasta que la carne esté suave.
