  • 200 g fresh salmon slices

YU SHENG DRESSING

  • 2 Knorr Tom Yam Stock Cubes (smashed to bits and add in 2 tbsp of hot water to make paste)
  • Half cup lemon juice
  • 70 g coriander leaf roots
  • 20 g coriander leaf
  • 30 g gula melaka (rough cut)
  • 4 tbsp Thai fish sauce
  • 1/2 cup Thai chilli sauce
  • 2 tbsp toasted baby dried shrimps

YU SHENG INGREDIENTS

  • 180 g thinly sliced white radish strips
  • 180 g thinly sliced carrot strips
  • 80 g mandarin oranges (peeled and cut into wedges)
  • 80 g Canned longans
  • 80 g canned pineapple
  • 40 g candied ginger strip
  • 20 g candied mango strip
  • 20 g candied papaya strips
  • 40 g winter melon sugar strips
  • 40 g vegetable / prawn crackers

  1. Combine the KNORR TOM YAM CUBE paste and all Yu Sheng Dressing ingredients into a blender and puree it to a fine, smooth mix.

  2. Place all Yu Sheng ingredients onto the big platter neatly as shown and place the fresh salmon slices over it.

  3. Linger the dressing over your platter and you are ready to toss the Yu Sheng.
