Sweet potato fries with Salted Egg Dip

  • 6 sweet potatoes (purple skin with orange flesh)
  • 1 tbsp Knorr Hao Chi Seasoning
  • 1 tbsp smoked paprika
  • 2 tbsp cornflour
  • 1 tsp black pepper
  • 1 tsp salt

Dipping Sauce:

  • 100 g cold unsalted butter
  • 4 tbsp Knorr Salted Egg Yolk Powder
  • 100 g soured cream
  • salt & pepper to taste

  1. Preheat oven to 220°C.

  2. Slice sweet potatoes evenly into 1cm strips and place in water for 30 mins to remove excess starch.

  3. Combine ingredients for dipping sauce, and mix together under low heat. Set aside.

  4. Drain sweet potatoes and pat dry. Place into mixing bowl.

  5. Mix Knorr Hao Chi Seasoning, smoked paprika, corn flour, salt and pepper in a separate bowl.

  6. Drizzle olive oil onto sweet potatoes and toss. Ensure it is evenly coated with oil. After which, sprinkle and toss spices mixture on sweet potatoes.

  7. Evenly spread out the sweet potatoes on a baking sheet. Bake for 15 minutes. Flip fries over and bake for another 10 minutes or until crispy.

  8. Cool fries on wire rack, and sprinkle with some sea salt. Serve alongside with salted egg yolk dip.
