BEEF RICE NOODLE SOUP

  • 13 g beef meatballs
  • 400 g beef steak (sliced into bite-sized pieces)
  • 800 g rice noodles (cooked)
  • 200 g beansprouts (cooked)
  • 1 stalks spring onion, (chopped)
  • 3 tbsp deep fried garlic flakes
  • 2 stalks chinese coriander
  • 4 tbsp garlic oil

FOR BEEF SOUP:

  • 1,600 ml hot water
  • 2 Knorr Beef Stock Cube
  • 2 Knorr Chicken Stock Cube
  • 1 star anise
  • 2 stalks lemon grass (cut into 5 cm and crushed)
  • 2 galangal (cut into slices and crushed)
  • 6 garlic clove (crush whole clove with the skin)
  • 2 tbsp cracked with peppercorn
  • 2 tbsp brown sugar
  • 1 stalks spring onion (garnish)

BEEF RICE NOODLE SOUP
  1. Heat water in pot. Add all beef soup ingredients and bring to boil. Reduce heat and simmer for 20 minutes.

  2. Add meatballs and bring to boil again.

  3. Blanch beef slices in boiling water till cooked.

  4. Arrange beef slices in individual bowls, fill with rice noodles and bean sprouts.

  5. Pour desired amount of meatballs and beef soup into serving bowls.

  6. Garnish with spring onions, garlic flakes, coriander and garlic oil. Serve hot.
