    Serves

  • 1 kilogram beef sirloin (sliced into ¼-inch thick)
  • 1 teaspoon baking powder
  • 1 piece Knorr Beef Cube
  • 1/4 cup Knorr Liquid Seasoning
  • 1/4 cup sugar
  • 1/4 cup corn oil (for marinade)
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • cooking oil (for cooking)

  1. Tenderize the Beef Time: 10 minutes Place the beef slices between plastic or parchment and pound using a meat mallet. Sprinkle baking powder evenly over the beef, toss lightly, and let it rest in the refrigerator for 10 minutes. Rinse quickly under running water and pat dry. Tip: Baking powder breaks down muscle fibers for a more tender bite, but rinsing is key to avoid any off taste.

  2. Marinate the Beef Time: 1 hour In a small saucepan, combine Knorr Beef Cube, Knorr Liquid Seasoning, sugar, and corn oil. Cook over low heat until Knorr Beef Cube and sugar are dissolved. Allow to cool before adding beef slices. Massage thoroughly to coat each piece evenly. Transfer to a covered food-grade container and marinate in the chiller for at least 1 hour or overnight.

  3. Fry the Beef Tapa Time: 10–12 minutes Heat oil in a pan over medium-high heat. Arrange beef slices in a single layer and fry in batches. Cook until caramelized and slightly crisp on the edges, about 2-3 minutes per side. Remove and set aside. Tip: Avoid overcrowding the pan so the beef sears instead of steams.

  4. Make the Tapa Sauce Time: 5 minutes Lower heat to medium. Pour the reserved marinade into the same pan and bring to a gentle simmer. Add dissolved cornstarch and stir continuously until the sauce thickens and becomes glossy. Pour over the cooked beef. Serve hot. Tip: The sauce should lightly coat the meat, not drown it. Stop once it reaches a syrupy consistency.

How Did Tapa Get Its Name?

The word “tapa” originally referred to the precolonial practice of curing or air-drying meat to preserve it long before refrigeration existed. While traditional versions were heavily salted and dried, modern beef tapa has evolved into a freshly marinated, fast-frying favorite. It’s also commonly known today as the star of tapsilog, or the breakfast combo of tapa, sinangag or fried rice, and itlog or egg.

What Makes Beef Tapa Tender and Flavorful

How to cook tapa to its “just right” meaty texture and maintain its flavor? It all comes down to a smart chemical reaction and a deep marinade process. Pounding the beef and adding a touch of baking powder breaks down just enough tough proteins, so the meat stays juicy and easy to chew, instead of rubbery. By letting the beef fibers relax, the meat can fully soak up the savory-sweet marinade, ensuring you get maximum flavor in every single bite.
