Meat Loaf With Tomato And Onion Gravy

  • 1 Onion, finely chopped
  • Beef mince
  • 2 cloves garlic, chopped
  • Dry breadcrumbs
  • KNORR beef cubes, crumbled
  • Paprika
  • Crushed chilli flakes
  • Coarse black pepper
  • Fresh thyme chopped
  • 1 Egg
  • SAUCE: ½ onion, chopped
  • Oil
  • Sugar
  • Knorr beef stock cubes
  • Water
  • Blended tomato, chilli, red pepper mix
  • Corn flour

  1. Preheat the oven to 180 degrees.

  2. In a bowl, mix all the ingredients until well combined.

  3. Shape into a loaf, or press into a loaf tin.

  4. Bake uncovered for 50 – 60 minutes.

  5. For the SAUCE: Fry the onion in the oil until browned.

  6. Add the remaining ingredients except the cornflour and simmer for 10 minutes.

  7. Mix the cornflour with some water, add to the sauce and allow to thicken.

  8. Serve with chips, yam or salad.
